Our chefs will be on hand to teach you about all aspects of seafood and how to handle, fillet, shell and cook it. There is also a range of complimentary courses which cover sauces, bread making, desserts, meat & vegetarian dishes etc.
Jonathan Hall
Jonathan Hall (32) has been Head Chef and Co-Owner at Glassdrumman Lodge for almost ten years now. He began his culinary career under his father’s guidance who achieved many prestigious awards both at Glassdrumman House and then Glassdrumman Lodge.
He was the youngest student (17) at the time to earn a place with Darina Allen at Ballymaloe Cookery School and completed his time there with a Commendation. Further experiences took him over Ireland, Sweden and Spain where his repertoire of dishes and gastronomic education continued under many highly sought after names. Glassdrumman Lodge’s kitchens have inspired Chefs to Gordon Ramsey’s Hospital Road and The Merchant Hotel in Belfast amongst others.
Jonathan has worked with Irelands best celebrity chefs and learnt from its best kept secret cooks and bakers alike. Glassdrumman Lodge’s motto has always been Simple Excellence and that’s a theme carried throughout his cooking life. Awards from Georgina Campbell through Egon Ronay, The Grub Club and a host of other writers, critics and commentators have secured Jonathan as a leading local chef.
